This single cultivar 2025 spring sencha from the first harvest of the year is created by renowned tea master and farmer Uejima Noriyasu from Wazuka, Kyoto.

Single cultivar teas from Uejima Sourokouen are both single estate and single origin meaning they each come from one specific tea field owned by Uejima-san. 

Similar to last few years , after speaking with Uejima-san to ask his favourite cultivarhe chose this Tsuyuhikari. 

" "Tsuyuhikari" The colour of the brewed tea is a beautiful clear green. Refreshing and rich aroma containing sweetness, rich flavour and sweetness spread in the mouth. Above all, the moment you put it in your mouth, the "green fragrance ingredient" that only fresh tea has is released from your mouth and nose. The first brew has a very mild astringency, not much astringency, and a stronger sweetness than umami. "

 

Steeping Notes:  5g | 60°-70°C | 1min | 150-200ml

Re-steep the leaves multiple times. Gradually increase the water temperature and lessen infusion time
